Ingredients:

  • 1/2 cup runny tahini
  • 2 tbsp extra virgin olive oil
  • 3 tbsp warm water
  • 3 tbsp freshly squeezed lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 clove garlic, finely minced
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. In a mixing bowl or blender, combine the tahini, olive oil, lemon juice, and apple cider vinegar. Whisk vigorously until emulsified.
  2. Slowly drizzle in the warm water one tablespoon at a time while continuing to whisk until the dressing reaches a silky, pourable consistency.
  3. Stir in the maple syrup, minced garlic, salt, and black pepper. Taste and adjust with extra lemon juice or salt if needed.
