Ingredients:
- 1/4 cup turkey pan drippings
- 1 tbsp finely minced shallots
- 1/4 cup all-purpose flour
- 2 cups turkey stock
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/8 tsp ground nutmeg
Instructions:
- Place a medium saucepan over medium heat and add the 1/4 cup of turkey pan drippings.
- Sauté the finely minced shallots for 1-2 minutes until translucent and fragrant.
- Whisk in the 1/4 cup of all-purpose flour and stir constantly for 3-5 minutes until the mixture smells nutty and turns a light golden-brown color.
- Slowly pour in the turkey stock, approximately 1/4 cup at a time, whisking vigorously after each addition until the mixture transforms into a smooth, heavy cream consistency.
- Increase the heat slightly to bring the gravy to a gentle simmer.
- Stir in the kosher salt, black pepper, and ground nutmeg. Simmer for 2-3 minutes until the gravy coats the back of a spoon.
