Ingredients:
- 2 ½ cups (310g) all-purpose flour
- 1 tablespoon (12g) granulated sugar
- 1 teaspoon (6g) fine sea salt
- 1 cup (225g) unsalted butter, chilled and cubed
- 6 tablespoons (90ml) ice water
- 1 tablespoon (15ml) egg yolk
- 1 teaspoon (4g) coarse sugar
Instructions:
- Whisk together the flour, sugar, and salt in a large mixing bowl until evenly distributed.
- Add the chilled, cubed butter to the flour. Use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized lumps of butter still visible.
- Drizzle in the ice water, one tablespoon at a time, tossing gently with a fork after each addition until the dough begins to hold together.
- Form the dough into a disk, wrap in plastic, and chill in the refrigerator for 1 hour.
- Roll out the dough to fit your pie dish, add filling, and brush the edges with egg yolk or heavy cream.
- Sprinkle the edges with coarse sugar and bake for 45-60 minutes or until golden brown.
