Ingredients:

  • 2 ½ cups (310g) all-purpose flour
  • 1 tablespoon (12g) granulated sugar
  • 1 teaspoon (6g) fine sea salt
  • 1 cup (225g) unsalted butter, chilled and cubed
  • 6 tablespoons (90ml) ice water
  • 1 tablespoon (15ml) egg yolk
  • 1 teaspoon (4g) coarse sugar

Instructions:

  1. Whisk together the flour, sugar, and salt in a large mixing bowl until evenly distributed.
  2. Add the chilled, cubed butter to the flour. Use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized lumps of butter still visible.
  3. Drizzle in the ice water, one tablespoon at a time, tossing gently with a fork after each addition until the dough begins to hold together.
  4. Form the dough into a disk, wrap in plastic, and chill in the refrigerator for 1 hour.
  5. Roll out the dough to fit your pie dish, add filling, and brush the edges with egg yolk or heavy cream.
  6. Sprinkle the edges with coarse sugar and bake for 45-60 minutes or until golden brown.
