Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 ¾ cups (340g) all-purpose flour
- ½ tsp (3g) baking soda
- ½ tsp (3g) salt
- 2 cups (250g) powdered sugar
- 3 tbsp (45ml) milk
- 1 tsp (5ml) vanilla extract
- Gel food coloring
Instructions:
- Cream the softened butter and granulated sugar until light and fluffy using an electric mixer.
- Beat in the egg and vanilla extract until fully emulsified.
- In a separate bowl, whisk together the flour, baking soda, and salt; gradually add the dry ingredients to the wet mixture until a soft dough forms.
- Wrap the dough in plastic and chill in the refrigerator for 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll the chilled dough on a floured surface to ¼ inch thickness and cut into graduation shapes.
- Bake for 8-10 minutes, just until the edges are barely golden. Let cookies cool completely on the pan.
- Whisk together powdered sugar, milk, and vanilla extract until smooth.
- Divide the glaze into bowls and stir in gel food coloring.
- Spoon a small amount of glaze onto the center of each cookie and spread outward with the back of a spoon. Let set for 20 minutes before serving.
