Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 2 ¾ cups (340g) all-purpose flour
  • ½ tsp (3g) baking soda
  • ½ tsp (3g) salt
  • 2 cups (250g) powdered sugar
  • 3 tbsp (45ml) milk
  • 1 tsp (5ml) vanilla extract
  • Gel food coloring

Instructions:

  1. Cream the softened butter and granulated sugar until light and fluffy using an electric mixer.
  2. Beat in the egg and vanilla extract until fully emulsified.
  3. In a separate bowl, whisk together the flour, baking soda, and salt; gradually add the dry ingredients to the wet mixture until a soft dough forms.
  4. Wrap the dough in plastic and chill in the refrigerator for 30 minutes.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll the chilled dough on a floured surface to ¼ inch thickness and cut into graduation shapes.
  7. Bake for 8-10 minutes, just until the edges are barely golden. Let cookies cool completely on the pan.
  8. Whisk together powdered sugar, milk, and vanilla extract until smooth.
  9. Divide the glaze into bowls and stir in gel food coloring.
  10. Spoon a small amount of glaze onto the center of each cookie and spread outward with the back of a spoon. Let set for 20 minutes before serving.
