Ingredients:

  • 8 oz full-fat block cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups confectioners' sugar, sifted
  • 1 tsp pure vanilla extract
  • 1/4 tsp fine salt

Instructions:

  1. Set out the butter and cream cheese. Note: Ensure they are truly room temperature to avoid lumps.
  2. Place softened butter and cream cheese in a bowl.
  3. Beat on medium high speed for 2-3 minutes until the mixture is pale and completely smooth.
  4. Turn the mixer to low. Note: This prevents a sugar cloud from covering your kitchen.
  5. Gradually add the sifted powdered sugar one cup at a time.
  6. Mix until the sugar is partially incorporated.
  7. Add the vanilla extract and salt.
  8. Increase the speed to medium high and whip for an additional 60 seconds.
  9. Scrape the sides and bottom of the bowl with a rubber spatula.
  10. Beat for another 30 seconds until the icing is glossy and stiff.
