Ingredients:
- 1.5 cups (190g) whole wheat pastry flour
- 0.5 cup (115g) unsalted butter, chilled and cubed
- 0.25 cup (60ml) maple syrup
- 0.25 tsp (1.5g) fine sea salt
- 2 tbsp (30ml) cold water
- 4 cups (540g) Granny Smith apples, peeled and finely diced
- 2 tbsp (30ml) lemon juice
- 3 tbsp (40g) coconut sugar
- 1 tbsp (8g) ground cinnamon
- 1 tbsp (8g) cornstarch
- 0.25 tsp (1.5g) ground nutmeg
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, combine flour and salt. Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in the maple syrup and cold water until a dough just forms.
- Press the dough evenly into the bottom of the pan and prick the base with a fork to prevent air bubbles.
- Bake for 10 minutes, then remove from the oven.
- Toss the diced apples with lemon juice to prevent browning.
- In a separate bowl, whisk together coconut sugar, cinnamon, cornstarch, and nutmeg.
- Fold the spice mixture into the apples until every piece is evenly coated.
- Spread the apple mixture over the pre-baked crust, smoothing the top with a spatula.
- Return the pan to the oven and bake for 35-40 minutes until edges are mahogany-colored and the center is set.
