Ingredients:

  • 1.5 cups (190g) whole wheat pastry flour
  • 0.5 cup (115g) unsalted butter, chilled and cubed
  • 0.25 cup (60ml) maple syrup
  • 0.25 tsp (1.5g) fine sea salt
  • 2 tbsp (30ml) cold water
  • 4 cups (540g) Granny Smith apples, peeled and finely diced
  • 2 tbsp (30ml) lemon juice
  • 3 tbsp (40g) coconut sugar
  • 1 tbsp (8g) ground cinnamon
  • 1 tbsp (8g) cornstarch
  • 0.25 tsp (1.5g) ground nutmeg

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine flour and salt. Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Stir in the maple syrup and cold water until a dough just forms.
  4. Press the dough evenly into the bottom of the pan and prick the base with a fork to prevent air bubbles.
  5. Bake for 10 minutes, then remove from the oven.
  6. Toss the diced apples with lemon juice to prevent browning.
  7. In a separate bowl, whisk together coconut sugar, cinnamon, cornstarch, and nutmeg.
  8. Fold the spice mixture into the apples until every piece is evenly coated.
  9. Spread the apple mixture over the pre-baked crust, smoothing the top with a spatula.
  10. Return the pan to the oven and bake for 35-40 minutes until edges are mahogany-colored and the center is set.
