Ingredients:

  • 6 large Granny Smith or Honeycrisp apples, peeled and sliced (approx. 3 lbs / 1.36 kg)
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh lemon zest
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 3 tbsp cornstarch
  • 2 tbsp unsalted butter

Instructions:

  1. Place the sliced apples in a large bowl and toss immediately with the lemon juice. Let the apples sit for 5 minutes.
  2. Melt the butter in a large heavy-bottomed skillet or Dutch oven over medium heat. Add the apples and lemon zest, stirring gently for 3–5 minutes until the apples are barely softened.
  3. In a small bowl, whisk together the granulated sugar, brown sugar, cinnamon, nutmeg, salt, and cornstarch.
  4. Sprinkle the sugar mixture over the apples. Stir constantly for 2–3 minutes as the sugar dissolves and the cornstarch activates into a velvety glaze.
  5. Remove the pan from the heat and allow the filling to cool completely to room temperature before adding to a pie crust.
