Ingredients:

  • 1.5 cups chocolate wafer crumbs
  • 5 tbsp unsalted butter, melted
  • 1 tbsp granulated sugar
  • 24 oz cream cheese, softened
  • 8 oz white chocolate, melted
  • 0.75 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup sour cream, room temperature
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 0.5 cup black raspberry preserves
  • 1 tsp lemon juice

Instructions:

  1. Combine the chocolate crumbs, melted butter, and sugar in a medium bowl until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of the springform pan, using the bottom of a measuring cup to ensure an even, compact layer.
  3. Bake the crust at 350°F (175°C) for 8–10 minutes. Remove from the oven and let it cool completely.
  4. Beat the softened cream cheese and sugar on medium-low speed until completely smooth and devoid of lumps.
  5. Blend in the melted white chocolate, sour cream, vanilla, and salt.
