Ingredients:
- 1.5 cups chocolate wafer crumbs
- 5 tbsp unsalted butter, melted
- 1 tbsp granulated sugar
- 24 oz cream cheese, softened
- 8 oz white chocolate, melted
- 0.75 cup granulated sugar
- 3 large eggs, room temperature
- 1 cup sour cream, room temperature
- 1 tsp vanilla extract
- 0.25 tsp salt
- 0.5 cup black raspberry preserves
- 1 tsp lemon juice
Instructions:
- Combine the chocolate crumbs, melted butter, and sugar in a medium bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the springform pan, using the bottom of a measuring cup to ensure an even, compact layer.
- Bake the crust at 350°F (175°C) for 8–10 minutes. Remove from the oven and let it cool completely.
- Beat the softened cream cheese and sugar on medium-low speed until completely smooth and devoid of lumps.
- Blend in the melted white chocolate, sour cream, vanilla, and salt.
