Ingredients:

  • 1/2 cup (115g) vegan butter, melted
  • 3/4 cup (150g) brown sugar, packed
  • 3 tbsp (45ml) aquafaba or flax egg
  • 1 tsp (5ml) vanilla extract
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1 cup (125g) all-purpose flour
  • 1 tsp (3g) cornstarch
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1.5g) salt
  • 3/4 cup (130g) dairy-free semi-sweet chocolate chips

Instructions:

  1. Whisk the melted vegan butter and brown sugar together vigorously. Add the aquafaba and vanilla, beating the mixture for 2 minutes until it looks glossy and slightly aerated.
  2. Sift in the cocoa powder, flour, cornstarch, baking powder, and salt. Using a spatula, fold the ingredients together just until no streaks of flour remain.
  3. Gently fold in the dairy-free chocolate chips.
  4. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  5. Bake for 10 minutes until the edges are set but the center remains slightly soft.
