Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 3 ½ cups (420g) powdered sugar, sifted
  • 2 tsp (10ml) pure vanilla extract
  • 2 tbsp (30ml) heavy cream
  • ¼ tsp (1.5g) fine sea salt

Instructions:

  1. Beat the softened butter on medium high speed for 3-5 minutes until the color shifts from yellow to a pale ivory.
  2. Reduce the mixer speed to low.
  3. Gradually add the sifted powdered sugar one cup at a time.
  4. Increase the speed to medium for 2 minutes until the mixture becomes a stiff, cohesive paste.
  5. Stir in the vanilla extract, salt, and heavy cream.
  6. Beat on medium high for another 2 minutes until the texture is velvety and smooth.
  7. Check the consistency.
  8. Add more cream one teaspoon at a time if it's too stiff.
  9. Add powdered sugar one tablespoon at a time if it's too soft.
  10. Give it one final 30 second whip on high for a glossy finish.
