Ingredients:

  • 1 medium head of Green Cabbage (approx. 2 lbs / 900g)
  • 3 tbsp Olive Oil
  • 2 tbsp Unsalted Butter, melted
  • 1 tsp Garlic Powder
  • 1 tsp Kosher Salt
  • 1/2 tsp Cracked Black Pepper
  • 1/2 tsp Smoked Paprika

Instructions:

  1. Slice the cabbage into 8 equal wedges. Note: Keep the core intact so they don't fall apart.
  2. Whisk the olive oil, melted butter, garlic powder, salt, pepper, and smoked paprika in a bowl.
  3. Toss the wedges in the spice mix. Wait until every single layer is glossy and coated to ensure the fat hits every crevice.
  4. Line your tray with parchment paper.
  5. Arrange the wedges on the tray. Note: Leave at least an inch of space between them.
  6. Slide them into the oven at 425°F (220°C).
  7. Roast for 20 minutes. Listen for the sizzle and look for mahogany colored edges.
  8. Remove when the outer leaves are charred and the centers feel tender when poked with a fork.
