Ingredients:
- 2 cups (400g) sushi rice
- 2 ¼ cups (530ml) water
- 3 tbsp (45ml) rice vinegar
- 1 tbsp (12g) granulated sugar
- ½ tsp (3g) salt
- 1 lb (450g) sushi-grade salmon fillet
- 2 tbsp (30ml) soy sauce
- 1 tbsp (15ml) toasted sesame oil
- 1 tsp (5ml) honey
- 1 tsp (5g) freshly grated ginger
- 1 medium (150g) avocado
- 1 cup (120g) cucumber
- ½ cup (75g) shelled edamame
- ¼ cup (40g) red radish
- 2 tbsp (15g) toasted sesame seeds
- 2 sheets (10g) nori seaweed
- ¼ cup (60g) Kewpie mayonnaise
- 1 tbsp (15ml) sriracha
- 1 tsp (5ml) lime juice
Instructions:
- Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot or rice cooker, bring to a boil, then cover and simmer on low for 15 minutes.
- While the rice is hot, gently fold in the rice vinegar, sugar, and salt using a wooden spoon.
- Let the rice sit uncovered for 5 minutes to allow excess steam to escape.
- In a medium bowl, whisk together soy sauce, sesame oil, honey, and ginger. Toss in the cubed salmon and let it marinate for 10 minutes.
- Prepare the fresh toppings by slicing the avocado, cucumber, and radish, and steaming the shelled edamame.
- Combine Kewpie mayonnaise, sriracha, and lime juice in a small bowl to create the spicy mayo drizzle.
- Assemble the bowls by placing a base of seasoned rice topped with marinated salmon, avocado, cucumber, edamame, and radish. Drizzle with spicy mayo and garnish with toasted sesame seeds and shredded nori.
