Ingredients:
- 1 lb strawberries, hulled and quartered
- 2 cups orange segments, peeled and sliced
- 2 cups pineapple chunks, fresh or canned
- 3 medium kiwis, peeled and sliced
- 1 tbsp fresh lemon juice
- 1 cup blueberries, whole
- 1 cup purple grapes, seedless
- 1 cup Greek yogurt, plain or vanilla
- 2 tbsp honey
- 1/2 tsp vanilla extract
Instructions:
- Wash all fruit thoroughly under cold water.
- Cut the pineapple, kiwi, and oranges into uniform cubes about 1 inch wide. Note: Match them to the size of your largest grape.
- Toss the cut pineapple and kiwi in a squeeze of fresh lemon juice. Wait 2 mins until the fruit looks glossy.
- Grab a skewer and slide on one strawberry quarter.
- Add an orange segment, then a pineapple chunk, then a kiwi slice.
- Slide on one blueberry and finish with a purple grape. Push them firmly together so they don't slide.
- Repeat the process for the remaining fruit until you have 20 skewers.
- Pour the Greek yogurt into a mixing bowl.
- Whisk in the honey and vanilla extract. Stir for 1 minute until the mixture is velvety and smooth.
- Place the dip in a small bowl in the center of a platter and arrange the skewers around it.
