Ingredients:

  • 1.5 lbs ground beef (80/20 lean-to-fat ratio)
  • 3/4 cup Quaker Oats (Old Fashioned or Quick-cooking, uncooked)
  • 3/4 cup whole milk
  • 1 large egg, lightly beaten
  • 1/4 cup onion, finely chopped
  • 1 tsp fine sea salt
  • 1/4 tsp black pepper, freshly ground
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar

Instructions:

  1. In a large mixing bowl, whisk together the egg, milk, salt, and pepper. Stir in the Quaker Oats and chopped onions. Let this mixture sit for 5 minutes to allow the oats to soften.
  2. Add the ground beef to the oat mixture. Using your hands, gently combine the ingredients until just incorporated. Do not over-squeeze or over-mix to maintain a tender texture.
  3. Press the mixture into a 9x5 inch loaf pan, or shape it into a 9x5 inch rectangle on a rimmed baking sheet for more surface caramelization.
  4. In a small bowl, whisk together the ketchup, Worcestershire sauce, and brown sugar to create the glaze.
  5. Spread the glaze evenly over the top of the meatloaf and bake at 350°F (175°C) for 1 hour or until the internal temperature reaches 160°F.
