Ingredients:

  • 1/2 cup (120g) pumpkin puree
  • 1 tbsp (15ml) maple syrup
  • 1/4 tsp (1g) pumpkin pie spice
  • 1/8 tsp (0.5g) ground cinnamon
  • 3/4 cup (170g) plain Greek yogurt
  • 1/2 tsp (2.5ml) pure vanilla extract
  • 1 tsp (5ml) honey or maple syrup
  • 1/3 cup (30g) low-sugar granola
  • 1 tbsp (8g) raw pepitas
  • pinch of ground nutmeg

Instructions:

  1. In a small bowl, combine the pumpkin puree, maple syrup, pumpkin pie spice, and cinnamon. Whisk vigorously until the mixture is smooth and mahogany-colored, with no visible clumps of spice.
  2. In a second bowl, fold the vanilla extract and optional honey into the Greek yogurt. Stir until the texture is velvety and the vanilla is evenly distributed.
  3. Spoon half of the spiced pumpkin paste into the bottom of the jar.
  4. Add a thick layer of the vanilla Greek yogurt.
  5. Add the remaining pumpkin paste.
  6. Top with the remaining Greek yogurt, smoothing the top with a spoon.
  7. Immediately before serving, sprinkle the granola and pepitas over the top. Finish with a light dusting of nutmeg for an aromatic scent.
