Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) packed light brown sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 cup (90g) quick-cooking oats
- 1 cup (125g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 4 oz (113g) cream cheese, softened
- 1/4 cup (60ml) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 3 tbsp (45ml) peach preserves
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- In a medium bowl, beat the softened butter and brown sugar until smooth and pale. Mix in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
- Gradually add the flour mixture to the wet ingredients, stirring until just combined. Fold in the quick oats until evenly distributed.
- Scoop rounded tablespoons of dough onto a parchment-lined sheet, spacing them 2 inches apart. Bake at 350°F (175°C) for 8–10 minutes until edges are set but centers remain pale.
- Let cookies rest on the pan for 5 minutes before transferring to a wire rack to cool completely.
- Whip the softened cream cheese and butter together until velvety and devoid of lumps.
- Gradually add powdered sugar one cup at a time on low speed. Stir in the peach preserves and vanilla extract.
- If the frosting is too stiff, add heavy cream one tablespoon at a time until it reaches a pipeable consistency.
- Spoon or pipe a generous dollop of peach cream onto the flat side of one cooled cookie.
- Gently press a second cookie on top, spreading the cream to the edges. Let them set for 30 minutes to firm up.
