Ingredients:
- 1 (14 oz / 397g) refrigerated pie crust
- 1 tbsp (15g) coarse sugar
- 1 egg (50g)
- 1 tbsp (15ml) milk
- 1 (29 oz / 822g) can sliced peaches, drained well
- 8 oz (225g) cream cheese, softened
- 1/2 cup (100g) granulated sugar
- 1/4 cup (30g) cornstarch
- 1 tsp (5g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 2 large eggs (100g)
Instructions:
- Preheat your oven to 375°F (190°C).
- Roll out the pie dough and press it firmly into the pie plate, ensuring the edges are crimped.
- Brush the edges with the beaten egg and milk wash and sprinkle with coarse sugar.
- In a large bowl, beat the softened cream cheese and granulated sugar until the mixture is pale and fluffy.
- Add the eggs one at a time, beating on medium speed until fully incorporated.
- Stir in the vanilla extract, cinnamon, and cornstarch until the batter is smooth and velvety.
- Gently fold the drained canned peaches into the cream mixture using a spatula, ensuring the fruit is evenly coated without breaking the slices.
- Pour the filling into the prepared crust, smoothing the top with a spatula.
- Bake for 50-60 minutes until the edges are set and the center has a slight, jellied wobble.
- Remove from the oven and cool completely on a wire rack for at least 2 hours to allow the custard to set.
