Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 1/3 cup (75g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- 3 cups (450g) fresh peaches, peeled and diced small
- 1/2 cup (100g) granulated sugar
- 3 tbsp (25g) cornstarch
- 1 tbsp (15ml) lemon juice
- 1/2 cup (120ml) water
- 1.5 cups (360ml) heavy whipping cream, chilled
- 1/3 cup (40g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Combine graham cracker crumbs, sugar, and melted butter in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom and up the sides of the 9-inch pie plate.
- Chill the crust in the freezer for 10 minutes to set.
- Whisk together sugar and cornstarch in the saucepan to remove lumps.
- Stir in water and lemon juice over medium heat.
- Simmer the mixture, stirring constantly, until it thickens and begins to bubble into a clear, thick syrup.
- Fold in the diced peaches and remove from heat immediately.
- Cool the peach mixture completely to room temperature.
- Pour chilled heavy cream, powdered sugar, and vanilla into a cold bowl.
- Beat on medium-high speed until stiff peaks form.
- Gently fold the cooled peach base into the whipped cream using a rubber spatula, preserving the air bubbles.
- Pour the filling into the chilled crust and refrigerate for 2 hours before serving.
