Ingredients:
- 2 medium zucchini, sliced into 1/2-inch planks (approx. 1.5 lbs / 680g)
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp dried oregano or thyme
- 1 tbsp fresh lemon juice
Instructions:
- In a large bowl, toss zucchini planks with olive oil, salt, and pepper until lightly coated. In a separate small bowl, combine grated Parmesan, garlic powder, and dried herbs.
- Preheat the grill to medium-high heat. Place zucchini planks across the grates and grill for 3–4 minutes per side until deep grill marks appear and the vegetable is slightly softened but still firm.
- During the final 2 minutes of grilling, sprinkle the Parmesan mixture generously over the top of each slice. Close the grill lid for 60 seconds to allow the cheese to melt and bubble.
- Remove from heat once the cheese is golden and fragrant. Drizzle with fresh lemon juice immediately before serving.
