Ingredients:

  • 2 medium zucchini, sliced into 1/2-inch planks (approx. 1.5 lbs / 680g)
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano or thyme
  • 1 tbsp fresh lemon juice

Instructions:

  1. In a large bowl, toss zucchini planks with olive oil, salt, and pepper until lightly coated. In a separate small bowl, combine grated Parmesan, garlic powder, and dried herbs.
  2. Preheat the grill to medium-high heat. Place zucchini planks across the grates and grill for 3–4 minutes per side until deep grill marks appear and the vegetable is slightly softened but still firm.
  3. During the final 2 minutes of grilling, sprinkle the Parmesan mixture generously over the top of each slice. Close the grill lid for 60 seconds to allow the cheese to melt and bubble.
  4. Remove from heat once the cheese is golden and fragrant. Drizzle with fresh lemon juice immediately before serving.
