Ingredients:

  • 2 medium zucchini, sliced into ¼ inch rounds (approx. 1 lb / 450g)
  • 2 medium yellow squash, sliced into ¼ inch rounds (approx. 1 lb / 450g)
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp cracked black pepper
  • 1 tsp garlic powder

Instructions:

  1. Preheat your oven to 425°F (220°C). Line your rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the zucchini and squash slices with olive oil, salt, pepper, and garlic powder until every slice is evenly coated.
  3. Spread the vegetables in a single layer on the baking sheet, ensuring slices do not overlap. Bake for 12–15 minutes until edges are deep golden brown and centers are soft.
