Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 1/3 cup (75g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 20 oz (567g) canned peaches, drained and diced
- 3 tbsp (25g) cornstarch
- 1/4 cup (60ml) water
- 1 tbsp (15ml) lemon juice
- 1/2 tsp (1g) ground cinnamon
- 1.5 cups (360ml) heavy whipping cream, cold
- 1/3 cup (40g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar in a bowl.
- Press the mixture firmly into the bottom and up the sides of the pie plate using the bottom of a measuring cup until the base feels dense and uniform. Note: This prevents the crust from crumbling when sliced
- Place the crust in the freezer for 10 minutes.
- In a saucepan, combine diced peaches, cornstarch, water, lemon juice, and cinnamon.
- Stir over medium heat until the mixture begins to bubble.
- Simmer for 2-3 minutes until the filling thickens into a, translucent glaze.
- Remove from heat and let cool completely to room temperature.
- Pour cold heavy cream, powdered sugar, and vanilla into a chilled bowl. Beat on medium high speed until stiff peaks form.
- Spread the cooled peach filling evenly over the chilled crust.
- Gently dollop the whipped cream on top and use a spatula to smooth it. Transfer to the refrigerator for at least 4 hours to set.
