Ingredients:
- 8 oz cream cheese, softened to room temperature
- 1/2 cup powdered sugar
- 1 tsp pure vanilla extract
- 1 package (3.4 oz) peach-flavored gelatin powder (dry)
- 1 tub (8 oz) whipped topping, thawed
- 1 can (15 oz) sliced peaches, drained well
- 1/4 cup peach nectar
Instructions:
- Using an electric hand mixer on medium speed, beat the softened cream cheese and powdered sugar until the mixture is smooth and pale.
- Stir in the vanilla extract until fully incorporated.
- Sift the dry peach gelatin powder over the cream cheese mixture and pulse briefly with the mixer to combine.
- Using a rubber spatula, gently fold in the thawed whipped topping using a figure-eight motion until no streaks remain.
- Carefully fold in the well-drained peach slices.
- Drizzle in the peach nectar if using, folding one last time to swirl the nectar through the fluff.
- Transfer the salad to a glass serving bowl.
- Refrigerate for at least 2 hours until the gelatin has set and the salad feels firm.
