Ingredients:

  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1 package (3.4 oz) peach-flavored gelatin powder (dry)
  • 1 tub (8 oz) whipped topping, thawed
  • 1 can (15 oz) sliced peaches, drained well
  • 1/4 cup peach nectar

Instructions:

  1. Using an electric hand mixer on medium speed, beat the softened cream cheese and powdered sugar until the mixture is smooth and pale.
  2. Stir in the vanilla extract until fully incorporated.
  3. Sift the dry peach gelatin powder over the cream cheese mixture and pulse briefly with the mixer to combine.
  4. Using a rubber spatula, gently fold in the thawed whipped topping using a figure-eight motion until no streaks remain.
  5. Carefully fold in the well-drained peach slices.
  6. Drizzle in the peach nectar if using, folding one last time to swirl the nectar through the fluff.
  7. Transfer the salad to a glass serving bowl.
  8. Refrigerate for at least 2 hours until the gelatin has set and the salad feels firm.
