Ingredients:
- 1 lb ground chicken
- 2 tbsp pure maple syrup
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp dried sage
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
- 1/4 tsp crushed red pepper flakes
- 2 tbsp olive oil
Instructions:
- Combine ground chicken, maple syrup, and all spices in a large bowl. Note: Use a fork to keep the meat light
- Mix the ingredients until the spices are just distributed. Stop immediately once you don't see any clumps of herbs to avoid a rubbery texture.
- Scoop 2 tablespoon mounds of the mixture.
- Press each mound with a spoon to form patties about 1/2 inch thick.
- Heat olive oil in a skillet over medium heat until it shimmers.
- Add patties in batches, leaving space so they sear instead of steaming.
- Cook for 4-5 minutes per side until a mahogany colored crust forms.
- Use a thermometer to check that the center is 165°F (74°C). Note: USDA guidance puts the safe internal temperature at 165°F
- Remove from the pan and let them rest for 2 minutes.
