Ingredients:

  • 1 lb ground chicken
  • 2 tbsp pure maple syrup
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes
  • 2 tbsp olive oil

Instructions:

  1. Combine ground chicken, maple syrup, and all spices in a large bowl. Note: Use a fork to keep the meat light
  2. Mix the ingredients until the spices are just distributed. Stop immediately once you don't see any clumps of herbs to avoid a rubbery texture.
  3. Scoop 2 tablespoon mounds of the mixture.
  4. Press each mound with a spoon to form patties about 1/2 inch thick.
  5. Heat olive oil in a skillet over medium heat until it shimmers.
  6. Add patties in batches, leaving space so they sear instead of steaming.
  7. Cook for 4-5 minutes per side until a mahogany colored crust forms.
  8. Use a thermometer to check that the center is 165°F (74°C). Note: USDA guidance puts the safe internal temperature at 165°F
  9. Remove from the pan and let them rest for 2 minutes.
