Ingredients:

  • 2 cups plain Greek yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 cup low-sugar granola
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 tsp lemon juice
  • 3 oz dark chocolate, chopped
  • 6 mini square dark chocolate pieces
  • 1 tbsp melted white chocolate
  • 6 pretzel sticks

Instructions:

  1. Gently melt the chopped dark chocolate in 30-second intervals in the microwave until smooth.
  2. Pipe a small circle of melted chocolate onto parchment paper and press a 1/2 inch pretzel stick piece into the center.
  3. Place a small chocolate square on top of the pretzel stick to form the cap.
  4. Use the white chocolate to pipe a thin line from the center of the square to the edge for the tassel.
  5. Chill the chocolate caps in the refrigerator for 15 minutes until firm.
  6. In a mixing bowl, whisk together Greek yogurt, honey, and vanilla until smooth.
  7. Gently fold blueberries and raspberries with lemon juice in a separate bowl.
  8. Assemble the parfaits by spooning yogurt into the bottom of 6 dessert cups, followed by the berry layer and granola.
  9. Top each cup with a chilled chocolate graduation cap and refrigerate for 2 hours before serving.
