Ingredients:
- 2 lbs sweet potatoes, peeled and diced into 1-inch cubes

Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the diced sweet potatoes with olive oil and fine sea salt until evenly coated.
- In a small bowl, whisk together the honey, melted butter, ground cinnamon, and ground nutmeg until smooth.
- Pour the honey glaze over the oiled potatoes and fold gently with a silicone spatula until every cube is encapsulated in the glaze.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring they do not touch to allow for proper roasting.
- Bake for 25-30 minutes, flipping the potatoes once halfway through, until the edges are deeply browned and the glaze has caramelized into a mahogany lacquer.
