- 0.75 cup (65g) rolled oats
- 0.5 cup (100g) brown sugar, packed
- 0.5 cup (115g) unsalted butter, chilled and cubed
- 0.5 tsp (2g) ground cinnamon
- 0.25 tsp (1.5g) salt
Instructions:
- Combine flour and salt in a medium bowl. Use a pastry cutter to work in the chilled butter until the mixture resembles coarse crumbs with a few pea-sized lumps remaining.
- Add ice water one tablespoon at a time, stirring with a fork until the dough just begins to clump together.
- Shape the dough into a disc, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the chilled dough on a floured surface to a 12-inch circle and press gently into a 9-inch pie dish, trimming the edges.
- In a large bowl, combine sliced peaches with sugar, cornstarch, cinnamon, lemon juice, and vanilla.
- Let the peach mixture sit for 10 minutes to macerate, ensuring the filling is evenly distributed.
- Pour the peach filling into the prepared pie crust.
- Prepare the crumble topping by mixing flour, rolled oats, brown sugar, cinnamon, and salt, then cutting in the chilled butter until crumbly.
- Spread the oat crumble evenly over the peach filling.
