Ingredients:

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp maple syrup
  • 1/4 tsp crushed red pepper flakes

Instructions:

  1. Add the ground chicken to a large bowl. Sprinkle the kosher salt, black pepper, dried sage, dried thyme, garlic powder, onion powder, crushed red pepper flakes, and maple syrup evenly over the meat.
  2. Using your hands or a sturdy spoon, mix gently until the spices are evenly distributed and the meat feels slightly tacky; avoid overworking the meat to maintain texture.
  3. Divide the mixture into 6 equal portions. Roll each into a ball, then press down firmly to create a patty about 1/2 inch thick with smooth edges.
  4. Heat the olive oil in a cast iron skillet or non-stick pan over medium-high heat until shimmering.
  5. Place the patties in the pan and cook for 4–5 minutes per side without moving them, until a deep mahogany crust forms and the internal temperature reaches 165°F.
