Ingredients:
- 1 lb ground chicken
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp dried sage
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp maple syrup
- 1/4 tsp crushed red pepper flakes
Instructions:
- Add the ground chicken to a large bowl. Sprinkle the kosher salt, black pepper, dried sage, dried thyme, garlic powder, onion powder, crushed red pepper flakes, and maple syrup evenly over the meat.
- Using your hands or a sturdy spoon, mix gently until the spices are evenly distributed and the meat feels slightly tacky; avoid overworking the meat to maintain texture.
- Divide the mixture into 6 equal portions. Roll each into a ball, then press down firmly to create a patty about 1/2 inch thick with smooth edges.
- Heat the olive oil in a cast iron skillet or non-stick pan over medium-high heat until shimmering.
- Place the patties in the pan and cook for 4–5 minutes per side without moving them, until a deep mahogany crust forms and the internal temperature reaches 165°F.
