Ingredients:
- 1 lb ground chicken (mix of breast and thigh)
- 1 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp freshly cracked black pepper
- 1 tsp dried sage
- ½ tsp dried thyme
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1 tbsp pure maple syrup
Instructions:
- In a large bowl, combine the cold ground chicken with the salt, pepper, sage, thyme, garlic powder, onion powder, and maple syrup. Gently mix until the spices are evenly distributed, taking care not to overwork the meat.
- Divide the mixture into 12 equal portions (roughly 2 tbsp each). Roll them into balls and flatten them into patties about ½ inch thick.
- Heat 1 tbsp of oil in a skillet over medium heat until shimmering.
- Add the patties to the skillet and cook for 4–5 minutes per side until a deep mahogany-colored crust forms and the internal temperature reaches 165°F (74°C).
