Ingredients:
- 1.25 cups (150g) all-purpose flour
- 0.5 cup (115g) chilled unsalted butter, cubed
- 1 tbsp (12g) organic cane sugar
- 0.25 tsp (1.5g) fine sea salt
- 4 tbsp (60ml) ice-cold water
- 0.5 cup (50g) almond flour
- 2 tbsp (30g) melted coconut oil
- 3 tbsp (45ml) pure maple syrup
- 1 small (30g) egg, beaten
- 0.25 tsp (1g) ground cinnamon
- 3 large (450g) red apples
- 1 tbsp (15ml) lemon juice
- 1 tbsp (15g) maple syrup
- 0.25 cup (60ml) water
- 2 tbsp (30ml) apricot preserves, strained
- 1 tsp (5ml) hot water
Instructions:
- Use a mandoline to slice the apples into uniform rounds, approximately 1/8 inch (3mm) thick, and remove the cores to create crescents.
- Toss apple slices with lemon juice, maple syrup, and water in a microwave-safe bowl. Microwave on high for 2-3 minutes until flexible, then drain and pat dry.
- Pulse flour, sugar, and salt in a processor. Add cold butter and pulse until pea-sized crumbs form. Slowly add ice water until the dough just holds together.
- Press the dough into a 9-inch tart pan, ensuring edges are flush, and chill in the freezer for 15 minutes.
- Whisk together almond flour, maple syrup, coconut oil, beaten egg, and cinnamon, then spread the filling evenly over the chilled crust.
- Arrange the pliable apple slices in a tight spiral pattern to create rose shapes across the tart surface.
- Bake according to temperature settings (initial high heat followed by steady roast) until edges are mahogany and crust is crisp.
- Mix strained apricot preserves with hot water and apply as a glaze using a pastry brush for a professional finish.
