Ingredients:

  • 6 cups (1.4 kg) peeled and sliced Granny Smith apples
  • 2 tbsp (30 ml) lemon juice
  • 1/2 cup (100 g) packed brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 tsp (2 g) ground cinnamon
  • 1/4 tsp (1 g) ground nutmeg
  • 1/4 tsp (1.5 g) salt
  • 2 tbsp (16 g) cornstarch
  • 2 tbsp (30 ml) water
  • 2 tbsp (28 g) unsalted butter

Instructions:

  1. Peel, core, and slice the apples into uniform 1/4-inch thick wedges. Immediately toss them in a bowl with the lemon juice to prevent oxidation.
  2. Melt the butter in a large heavy-bottomed skillet over medium heat. Stir in the brown sugar, granulated sugar, cinnamon, nutmeg, and salt until bubbling gently.
  3. Fold in the apple slices and cook for 5–7 minutes, stirring occasionally, until apples are barely tender but still hold their shape.
  4. Whisk cornstarch and water in a small bowl until smooth. Pour the slurry into the bubbling apples and stir constantly for 1–2 minutes until the sauce is glossy and thick.
