Ingredients:

  • 6 cups peeled and sliced Granny Smith or Honeycrisp apples
  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/2 tsp salt
  • 1 pint vanilla bean ice cream

Instructions:

  1. In a large bowl, combine the sliced apples, granulated sugar, cinnamon, lemon juice, and cornstarch.
  2. Mix until every apple slice is coated in the spiced mixture.
  3. Pour the apple mixture into a 9x9 inch baking dish, spreading it evenly.
  4. In a separate bowl, whisk together the flour, rolled oats, brown sugar, and salt.
  5. Add the chilled, cubed butter. Using a pastry cutter or forks, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
  6. Scatter the crumble mixture over the apples without pressing down firmly.
  7. Bake at 375°F (190°C) for 40–45 minutes until the fruit juices bubble and the topping is deep golden brown.
  8. Remove from the oven and let rest briefly before serving with a scoop of vanilla bean ice cream.
