Ingredients:
- 1 lb 93% lean ground turkey
- 1 tbsp olive oil
- 1/2 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 cup low-sodium chicken bone broth
- 1 tbsp fresh lime juice
- 8 small corn tortillas
- 1 avocado, sliced
- 1/2 cup shredded red cabbage, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Fresh lime wedges
Instructions:
- Heat olive oil over medium-high heat in a 12-inch skillet. Sauté diced onion for 3-4 minutes until translucent, then stir in minced garlic and cook for 30 seconds.
- Increase heat to high and add ground turkey. Break the meat apart with a spatula and cook until mahogany-colored and no longer pink, allowing it to sear for 2 minutes before breaking it up.
- Lower heat to medium. Stir in chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper. Pour in bone broth and lime juice, simmering for 5-7 minutes until the liquid reduces into a velvety glaze.
