Ingredients:

  • 1 lb 93% lean ground turkey
  • 1 tbsp olive oil
  • 1/2 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 cup low-sodium chicken bone broth
  • 1 tbsp fresh lime juice
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1/2 cup shredded red cabbage, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Fresh lime wedges

Instructions:

  1. Heat olive oil over medium-high heat in a 12-inch skillet. Sauté diced onion for 3-4 minutes until translucent, then stir in minced garlic and cook for 30 seconds.
  2. Increase heat to high and add ground turkey. Break the meat apart with a spatula and cook until mahogany-colored and no longer pink, allowing it to sear for 2 minutes before breaking it up.
  3. Lower heat to medium. Stir in chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper. Pour in bone broth and lime juice, simmering for 5-7 minutes until the liquid reduces into a velvety glaze.
