Ingredients:

  • 3 medium overripe bananas (approx. 240g) mashed
  • 1/4 cup honey (80ml)
  • 1 tsp vanilla extract (5ml)
  • 1/4 cup peanut butter (60g)
  • 2 cups old fashioned rolled oats (180g)
  • 1 tsp ground cinnamon (2g)
  • 1/2 tsp baking powder (2g)
  • 1/4 tsp sea salt (1.5g)
  • 1/2 cup chopped walnuts (60g)
  • 1/3 cup dark chocolate chips (60g)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, mash the bananas until smooth with no large lumps.
  3. Stir in the honey, vanilla extract, and peanut butter until the mixture is a glossy, uniform emulsion.
  4. Add the rolled oats, cinnamon, baking powder, and salt directly into the wet base; fold together with a spatula until the oats are fully saturated.
  5. Gently stir in the chopped walnuts and dark chocolate chips to ensure they are evenly distributed.
  6. Press the batter firmly into the prepared baking pan, leveling the top with the back of a spoon.
  7. Bake for 22–25 minutes, or until the edges are golden-brown.
