Ingredients:
- 1 lb (450g) lean ground turkey (93% lean)
- 1/4 cup (30g) almond flour
- 1 large (50g) egg, lightly beaten
- 2 tbsp (30g) plain Greek yogurt
- 1/4 cup (25g) grated Parmesan cheese
- 3 cloves (9g) garlic, minced
- 1 tsp (2g) dried Italian seasoning
- 1/2 tsp (3g) onion powder
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) cracked black pepper
- 2 tbsp (8g) fresh parsley, finely chopped
Instructions:
- In a large bowl, combine all ingredients. Mix with your hands or a fork until just combined, being careful not to overmix to avoid a rubbery texture.
- Scoop approximately 1.5 tbsp of the mixture and roll into balls roughly 1 inch (2.5cm) in diameter.
- Preheat the air fryer to 375°F (190°C). Lightly grease the basket or use a perforated parchment liner.
- Place meatballs in a single layer with 1/2 inch (1.2cm) of space between them.
- Cook for 10–12 minutes, shaking the basket halfway through, until mahogany-colored and they reach an internal temperature of 165°F (74°C).
