Ingredients:

  • 1 lb (450g) lean ground turkey (93% lean)
  • 1/4 cup (30g) almond flour
  • 1 large (50g) egg, lightly beaten
  • 2 tbsp (30g) plain Greek yogurt
  • 1/4 cup (25g) grated Parmesan cheese
  • 3 cloves (9g) garlic, minced
  • 1 tsp (2g) dried Italian seasoning
  • 1/2 tsp (3g) onion powder
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) cracked black pepper
  • 2 tbsp (8g) fresh parsley, finely chopped

Instructions:

  1. In a large bowl, combine all ingredients. Mix with your hands or a fork until just combined, being careful not to overmix to avoid a rubbery texture.
  2. Scoop approximately 1.5 tbsp of the mixture and roll into balls roughly 1 inch (2.5cm) in diameter.
  3. Preheat the air fryer to 375°F (190°C). Lightly grease the basket or use a perforated parchment liner.
  4. Place meatballs in a single layer with 1/2 inch (1.2cm) of space between them.
  5. Cook for 10–12 minutes, shaking the basket halfway through, until mahogany-colored and they reach an internal temperature of 165°F (74°C).
