Ingredients:
- 1 lb lean ground turkey
- 2 tbsp avocado oil
- 2 cups broccoli florets
- 1 large red bell pepper
- 1 medium carrot
- 3 cloves garlic
- 1 tbsp fresh ginger
- 3 green onions
- 1/4 cup soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp cornstarch
- 1/4 tsp red pepper flakes
Instructions:
- Whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, and red pepper flakes in a small bowl until the cornstarch is completely dissolved.
- Chop broccoli, carrots, and bell peppers, and mince the garlic and ginger. Separate the green onion whites from the greens.
- Heat 1 tbsp of avocado oil over high heat in a wok or skillet. Add ground turkey, breaking it up with a spatula, and cook for 5–7 minutes until browned.
- Push the turkey to the sides of the pan and add the remaining 1 tbsp of oil to the center. Add broccoli and carrots, stirring for 2 minutes.
- Add the sliced red bell peppers and cook for another 2 minutes until crisp-tender. Stir in the minced garlic, ginger, and onion whites for the final 30 seconds.
- Give the sauce a quick stir and pour it over the turkey and vegetable mixture, stirring until the sauce emulsifies into a glossy glaze.
