Ingredients:

  • 1 lb lean ground turkey
  • 2 tbsp avocado oil
  • 2 cups broccoli florets
  • 1 large red bell pepper
  • 1 medium carrot
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 3 green onions
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp cornstarch
  • 1/4 tsp red pepper flakes

Instructions:

  1. Whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, and red pepper flakes in a small bowl until the cornstarch is completely dissolved.
  2. Chop broccoli, carrots, and bell peppers, and mince the garlic and ginger. Separate the green onion whites from the greens.
  3. Heat 1 tbsp of avocado oil over high heat in a wok or skillet. Add ground turkey, breaking it up with a spatula, and cook for 5–7 minutes until browned.
  4. Push the turkey to the sides of the pan and add the remaining 1 tbsp of oil to the center. Add broccoli and carrots, stirring for 2 minutes.
  5. Add the sliced red bell peppers and cook for another 2 minutes until crisp-tender. Stir in the minced garlic, ginger, and onion whites for the final 30 seconds.
  6. Give the sauce a quick stir and pour it over the turkey and vegetable mixture, stirring until the sauce emulsifies into a glossy glaze.
