Ingredients:

  • 2 medium zucchini (~1 lb / 450g), sliced into 1/2 inch rounds
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp dried oregano
  • 1/2 cup crumbled feta cheese
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh basil leaves, chiffonade
  • 1 tsp lemon zest

Instructions:

  1. Pat the zucchini slices completely dry with paper towels. In a large bowl, toss the slices with olive oil, salt, pepper, and oregano until evenly coated.
  2. Preheat your grill or grill pan to medium-high heat. Place the zucchini slices in a single layer and grill for 3–5 minutes per side until mahogany-colored grill marks appear.
  3. Transfer the hot zucchini to a platter. While still steaming, sprinkle with crumbled feta, drizzle with fresh lemon juice, and scatter the lemon zest and fresh basil over the top.
