Ingredients:

  • 2 medium zucchini, sliced into spears
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tbsp fresh lemon juice

Instructions:

  1. Wash and dry the zucchini thoroughly. Slice each zucchini in half lengthwise, then cut each half into four long spears.
  2. In a large bowl, toss the spears with olive oil, salt, and garlic powder immediately before grilling.
  3. Preheat your grill to medium-high. Place the spears across the grates and cook for 2–3 minutes without moving them to develop char marks. Flip using tongs and cook for another 2–3 minutes until tender-crisp.
  4. Remove the zucchini from the heat and immediately drizzle with fresh lemon juice.
