Ingredients:

  • 2 medium zucchini (approx. 1 lb / 450g), sliced into 1/2-inch thick rounds
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp fresh lemon juice
  • 1 tbsp extra-virgin olive oil
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • 1 tbsp fresh parsley, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp toasted pine nuts
  • 1 tsp lemon zest

Instructions:

  1. Slice the zucchini into uniform rounds. Place them in a bowl and lightly brush with 1 tablespoon of olive oil. Season with salt and pepper immediately before grilling.
  2. Preheat grill to medium-high. Grill zucchini slices for 3–4 minutes per side without moving them, until deep mahogany-colored grill marks appear and the center is tender. Remove and let cool slightly.
  3. In a small bowl, whisk together the lemon juice, 1 tablespoon of olive oil, minced garlic, dried oregano, and chopped parsley until fully emulsified.
  4. Place the warm zucchini in a large bowl. Drizzle the dressing over the top and toss gently. Fold in the crumbled feta and lemon zest, then top with toasted pine nuts.
