Ingredients:
- 2 medium zucchini, sliced into 1/4-inch planks (approx. 1 lb / 450g)
- 2 medium yellow summer squash, sliced into 1/4-inch planks (approx. 1 lb / 450g)
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced fine
- 1 tbsp fresh lemon juice
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Slice the zucchini and yellow squash lengthwise into planks approximately 1/4 inch thick.
- In a large bowl or on a sheet pan, toss the squash planks with the olive oil, minced garlic, lemon juice, salt, pepper, and red pepper flakes until evenly coated.
- Preheat the grill to medium-high heat. Place the planks perpendicular to the grill grates.
- Grill for 3–5 minutes per side until the squash looks glossy and slightly translucent with deep, caramelized mahogany grill marks.
- Remove from the heat immediately and garnish with a final squeeze of fresh lemon or a sprinkle of chopped parsley.
