Ingredients:

  • 2 medium zucchini, sliced into 1/4-inch planks (approx. 1 lb / 450g)
  • 2 medium yellow summer squash, sliced into 1/4-inch planks (approx. 1 lb / 450g)
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced fine
  • 1 tbsp fresh lemon juice
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Slice the zucchini and yellow squash lengthwise into planks approximately 1/4 inch thick.
  2. In a large bowl or on a sheet pan, toss the squash planks with the olive oil, minced garlic, lemon juice, salt, pepper, and red pepper flakes until evenly coated.
  3. Preheat the grill to medium-high heat. Place the planks perpendicular to the grill grates.
  4. Grill for 3–5 minutes per side until the squash looks glossy and slightly translucent with deep, caramelized mahogany grill marks.
  5. Remove from the heat immediately and garnish with a final squeeze of fresh lemon or a sprinkle of chopped parsley.
