Ingredients:
- 1 medium (approx. 8 oz / 225g) zucchini, thinly sliced into rounds
- 1 tbsp (14g) olive oil
- ¼ tsp (1.5g) salt
- ¼ tsp (1.5g) black pepper
- 2 tbsp (8g) grated Parmesan cheese
- 4 slices (approx. 120g) sourdough or thick-cut white bread
- 3 tbsp (42g) unsalted butter, softened
- 1 clove (3g) garlic, minced
- 4 slices (approx. 80g) sharp cheddar or Gruyère cheese
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add zucchini slices in a single layer and sear for 2 minutes per side until golden-brown and slightly charred.
- Sprinkle the zucchini with salt, pepper, and Parmesan cheese during the last minute of cooking. Remove from the pan and set aside on paper towels to drain.
- In a small bowl, mash together the softened butter and minced garlic. Spread a generous layer of this mixture on one side of each bread slice.
- Place two slices of bread, butter-side down, in the skillet. Layer on half of the cheddar cheese, followed by the seared zucchini slices, and the remaining cheese.
- Top with the second slice of bread, butter-side up. Press down lightly with a spatula and grill for 3–4 minutes per side until the bread is deep golden brown and cheese is melted.
