Ingredients:

  • 1 medium (approx. 8 oz / 225g) zucchini, thinly sliced into rounds
  • 1 tbsp (14g) olive oil
  • ¼ tsp (1.5g) salt
  • ¼ tsp (1.5g) black pepper
  • 2 tbsp (8g) grated Parmesan cheese
  • 4 slices (approx. 120g) sourdough or thick-cut white bread
  • 3 tbsp (42g) unsalted butter, softened
  • 1 clove (3g) garlic, minced
  • 4 slices (approx. 80g) sharp cheddar or Gruyère cheese

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add zucchini slices in a single layer and sear for 2 minutes per side until golden-brown and slightly charred.
  2. Sprinkle the zucchini with salt, pepper, and Parmesan cheese during the last minute of cooking. Remove from the pan and set aside on paper towels to drain.
  3. In a small bowl, mash together the softened butter and minced garlic. Spread a generous layer of this mixture on one side of each bread slice.
  4. Place two slices of bread, butter-side down, in the skillet. Layer on half of the cheddar cheese, followed by the seared zucchini slices, and the remaining cheese.
  5. Top with the second slice of bread, butter-side up. Press down lightly with a spatula and grill for 3–4 minutes per side until the bread is deep golden brown and cheese is melted.
