  • 1 tbsp honey
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt
  • 2 lbs boneless skinless chicken thighs

Instructions:

  1. Whisk the olive oil, lemon juice, soy sauce, honey, minced garlic, dried oregano, smoked paprika, black pepper, and kosher salt in a bowl until the honey is fully incorporated.
  2. Add the chicken thighs to the marinade, massaging the mixture into the meat to ensure full coverage. Seal in a bag and refrigerate for at least 30 minutes.
  3. Preheat your outdoor grill to medium-high (approximately 400°F/200°C).
  4. Place the thighs on the direct heat zone and sear for 4-5 minutes per side without moving them until a deep mahogany char forms.
  5. Move the chicken to the indirect heat zone (cooler side), close the lid, and cook for another 4-6 minutes.
  6. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C), then remove from heat.
  7. Let the meat rest for 5 minutes to allow juices to redistribute before serving.
