- 1 tbsp honey
- 4 cloves garlic, minced

- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp kosher salt
- 2 lbs boneless skinless chicken thighs
Instructions:
- Whisk the olive oil, lemon juice, soy sauce, honey, minced garlic, dried oregano, smoked paprika, black pepper, and kosher salt in a bowl until the honey is fully incorporated.
- Add the chicken thighs to the marinade, massaging the mixture into the meat to ensure full coverage. Seal in a bag and refrigerate for at least 30 minutes.
- Preheat your outdoor grill to medium-high (approximately 400°F/200°C).
- Place the thighs on the direct heat zone and sear for 4-5 minutes per side without moving them until a deep mahogany char forms.
- Move the chicken to the indirect heat zone (cooler side), close the lid, and cook for another 4-6 minutes.
- Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C), then remove from heat.
- Let the meat rest for 5 minutes to allow juices to redistribute before serving.
