Ingredients:

  • 1 cup (150g) fresh strawberries, hulled
  • 1 cup (150g) fresh pineapple, cubed
  • 1 cup (150g) cantaloupe or honeydew, cubed
  • 1 cup (150g) green grapes, seedless
  • 1 cup (150g) blueberries
  • 1 cup (150g) purple grapes or blackberries
  • 2 tbsp (30ml) fresh lemon juice
  • 1 cup (245g) Greek yogurt, plain
  • 2 tbsp (30ml) honey
  • ½ tsp (2.5ml) vanilla extract

Instructions:

  1. Wash all fruit thoroughly.
  2. Using a sharp knife, slice the pineapple and melon into uniform 1-inch cubes.
  3. Place the pineapple and melon in a large bowl and gently toss them with the lemon juice to prevent oxidation and maintain color.
  4. Lay bamboo skewers side-by-side on a clean surface.
  5. Slide the fruit onto the skewers in the following order to create a rainbow effect: Strawberry, Pineapple, Cantaloupe, Grape, Blueberry, Blackberry.
  6. In a small bowl, whisk together the Greek yogurt, honey, and vanilla extract until velvety.
  7. Place the dip in a decorative bowl in the center of a serving platter and arrange the fruit skewers radially around it.
