Ingredients:
- 1 cup (150g) fresh strawberries, hulled
- 1 cup (150g) fresh pineapple, cubed
- 1 cup (150g) cantaloupe or honeydew, cubed
- 1 cup (150g) green grapes, seedless
- 1 cup (150g) blueberries
- 1 cup (150g) purple grapes or blackberries
- 2 tbsp (30ml) fresh lemon juice
- 1 cup (245g) Greek yogurt, plain
- 2 tbsp (30ml) honey
- ½ tsp (2.5ml) vanilla extract
Instructions:
- Wash all fruit thoroughly.
- Using a sharp knife, slice the pineapple and melon into uniform 1-inch cubes.
- Place the pineapple and melon in a large bowl and gently toss them with the lemon juice to prevent oxidation and maintain color.
- Lay bamboo skewers side-by-side on a clean surface.
- Slide the fruit onto the skewers in the following order to create a rainbow effect: Strawberry, Pineapple, Cantaloupe, Grape, Blueberry, Blackberry.
- In a small bowl, whisk together the Greek yogurt, honey, and vanilla extract until velvety.
- Place the dip in a decorative bowl in the center of a serving platter and arrange the fruit skewers radially around it.
