Ingredients:

  • 3 cups low-fat milk
  • 1 box (3.4 oz) sugar-free chocolate pudding mix
  • 1 cup plain Greek yogurt
  • 1 tsp pure vanilla extract
  • 16 squares dark chocolate
  • 16 mini peanut butter cups
  • 2 tbsp melted chocolate
  • 2 tbsp gold sprinkles
  • 1 tbsp yellow frosting

Instructions:

  1. Whisk the pudding mix into the milk in a medium bowl until the powder is fully dissolved and the mixture is smooth.
  2. Stir in the vanilla extract.
  3. Gently fold in the Greek yogurt using a spatula until no white streaks remain, ensuring the mixture stays fluffy.
  4. Divide the mixture evenly among 16 clear plastic 2oz dessert cups.
  5. Place the filled cups in the refrigerator for 30 to 40 minutes to set.
  6. Once the pudding is firm, sprinkle a pinch of gold sprinkles around the inner rim of the cup.
  7. Place a small dot of melted chocolate on top of each mini peanut butter cup.
  8. Press a dark chocolate square firmly onto the peanut butter cup to create the flat top of the cap.
  9. Using a piping bag, pipe a tiny line of yellow frosting from the center of the square to the edge and top with a gold sprinkle to create the tassel.
  10. Place the completed chocolate caps on top of the chilled pudding cups.
