Ingredients:

  • 3 large over-ripe bananas (approx. 375g)
  • 2 large eggs, room temperature
  • 118ml Coconut oil
  • 60g Greek yogurt
  • 150g Light brown sugar
  • 2 tsp pure vanilla extract
  • 280g GF Baking flour
  • 24g Almond flour
  • 1 tsp Baking soda
  • 0.5 tsp Baking powder
  • 0.5 tsp Sea salt
  • 1 tsp Ground cinnamon
  • 0.5 cup chopped walnuts or dark chocolate chips (optional)

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease your loaf pan thoroughly.
  2. In a large bowl, smash the 375g of bananas until they are mostly liquid with very few lumps.
  3. Whisk in the 2 eggs, 118ml coconut oil, 60g yogurt, 150g brown sugar, and 2 tsp vanilla. Note: Whisk vigorously until the sugar is mostly dissolved.
  4. In a separate bowl, whisk together the 280g GF flour, 24g almond flour, soda, powder, salt, and cinnamon.
  5. Gently fold the dry ingredients into the wet until no streaks of white flour remain.
  6. Fold in your walnuts or chocolate chips if you are using them.
  7. Let the batter sit in the bowl for 5 minutes until the flours have begun to hydrate.
  8. Pour into the pan and bake for 60 minutes until a skewer comes out clean.
  9. Leave it in the pan for 10 minutes, then move to a wire rack. Note: This prevents the bottom from getting soggy from steam.
