Ingredients:
- 3 large over-ripe bananas (approx. 375g)
- 2 large eggs, room temperature
- 118ml Coconut oil
- 60g Greek yogurt
- 150g Light brown sugar
- 2 tsp pure vanilla extract
- 280g GF Baking flour
- 24g Almond flour
- 1 tsp Baking soda
- 0.5 tsp Baking powder
- 0.5 tsp Sea salt
- 1 tsp Ground cinnamon
- 0.5 cup chopped walnuts or dark chocolate chips (optional)
Instructions:
- Preheat your oven to 180°C (350°F) and grease your loaf pan thoroughly.
- In a large bowl, smash the 375g of bananas until they are mostly liquid with very few lumps.
- Whisk in the 2 eggs, 118ml coconut oil, 60g yogurt, 150g brown sugar, and 2 tsp vanilla. Note: Whisk vigorously until the sugar is mostly dissolved.
- In a separate bowl, whisk together the 280g GF flour, 24g almond flour, soda, powder, salt, and cinnamon.
- Gently fold the dry ingredients into the wet until no streaks of white flour remain.
- Fold in your walnuts or chocolate chips if you are using them.
- Let the batter sit in the bowl for 5 minutes until the flours have begun to hydrate.
- Pour into the pan and bake for 60 minutes until a skewer comes out clean.
- Leave it in the pan for 10 minutes, then move to a wire rack. Note: This prevents the bottom from getting soggy from steam.
