Ingredients:

  • 3/4 cup (175ml) vegetable oil
  • 3 large eggs
  • 1 cup (200g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tbsp (6g) fresh lemon zest
  • 3 cups (450g) peeled and sliced Granny Smith apples
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch pan with oil and lightly dust with flour.
  2. Slice apples into thin wedges and toss them in a bowl with lemon juice and cinnamon until evenly coated.
  3. In a large bowl, beat the vegetable oil and eggs with an electric mixer on medium-high until the mixture is creamy and pale.
  4. Add the granulated sugar and vanilla extract, beating for another 60 seconds until well combined.
  5. Sift in the flour, baking powder, and salt. Fold in the lemon zest. Mix on low speed just until the streaks of flour disappear.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Arrange the cinnamon-coated apple slices on top of the batter in overlapping rows, pressing them down slightly so they are partially submerged.
  8. Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
