Ingredients:
- 3/4 cup (175ml) vegetable oil
- 3 large eggs
- 1 cup (200g) granulated sugar
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 tbsp (6g) fresh lemon zest
- 3 cups (450g) peeled and sliced Granny Smith apples
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch pan with oil and lightly dust with flour.
- Slice apples into thin wedges and toss them in a bowl with lemon juice and cinnamon until evenly coated.
- In a large bowl, beat the vegetable oil and eggs with an electric mixer on medium-high until the mixture is creamy and pale.
- Add the granulated sugar and vanilla extract, beating for another 60 seconds until well combined.
- Sift in the flour, baking powder, and salt. Fold in the lemon zest. Mix on low speed just until the streaks of flour disappear.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Arrange the cinnamon-coated apple slices on top of the batter in overlapping rows, pressing them down slightly so they are partially submerged.
- Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
