Ingredients:
- 1.5 lbs sirloin or New York strip, cut into 1-inch cubes
- 1 tbsp neutral high-smoke point oil (Avocado or Grapeseed oil)
- 1.5 tsp Kosher salt
- 1 tsp coarsely cracked black pepper
- 3 tbsp unsalted grass-fed butter
- 4 cloves garlic, smashed and minced
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh rosemary, minced
Instructions:
- Pat the steak cubes extremely dry with paper towels to ensure a proper sear. Season with salt and pepper immediately before cooking.
- Heat a 12-inch cast iron skillet over high heat. Add the oil and wait until it is shimmering and just starting to smoke.
- Add the steak in a single layer, ensuring pieces do not touch. Leave undisturbed for 2 full minutes to develop a mahogany crust.
- Flip the steak bites and sear for another 2 minutes until browned on all sides (total sear time approximately 4 minutes).
- Reduce the heat to medium. Add the butter, minced garlic, and herbs to the pan.
- Tilt the pan and use a large spoon to baste the steak bites with the foaming garlic butter for 60 seconds before serving.
