Ingredients:
- 4 cups (600g) frozen peach slices, unsweetened
- 1 tbsp fresh lemon juice
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/3 cup pure maple syrup
- 3 tbsp cornstarch
- 1 tablespoon cold water
- 2 tbsp unsalted butter, cubed
Instructions:
- Place the frozen peach slices directly into the saucepan. Stir in the lemon juice, cinnamon, and salt.
- Set the heat to medium. As the peaches begin to thaw and release their juices, stir in the maple syrup and bring the mixture to a gentle simmer, stirring frequently.
- In a small bowl, create a slurry by mixing the cornstarch with 1 tablespoon of cold water. Slowly whisk this slurry into the simmering peaches and cook for 2-3 minutes until the liquid transforms into a clear, mahogany-colored glaze.
- Remove the pan from the heat and stir in the cubed butter. Allow the filling to cool completely before using it in a crust or freezing.
