Ingredients:

  • 4 cups (600g) frozen peach slices, unsweetened
  • 1 tbsp fresh lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup
  • 3 tbsp cornstarch
  • 1 tablespoon cold water
  • 2 tbsp unsalted butter, cubed

Instructions:

  1. Place the frozen peach slices directly into the saucepan. Stir in the lemon juice, cinnamon, and salt.
  2. Set the heat to medium. As the peaches begin to thaw and release their juices, stir in the maple syrup and bring the mixture to a gentle simmer, stirring frequently.
  3. In a small bowl, create a slurry by mixing the cornstarch with 1 tablespoon of cold water. Slowly whisk this slurry into the simmering peaches and cook for 2-3 minutes until the liquid transforms into a clear, mahogany-colored glaze.
  4. Remove the pan from the heat and stir in the cubed butter. Allow the filling to cool completely before using it in a crust or freezing.
