Ingredients:

  • 2 Large Eggs
  • 0.5 cup Whole Milk
  • 1 tbsp Granulated Sugar
  • 1 tsp Vanilla Extract
  • 0.5 tsp Ground Cinnamon
  • 1 pinch Fine Sea Salt
  • 4 thick slices Brioche bread
  • 1.5 tbsp Unsalted Butter

Instructions:

  1. In a wide, shallow bowl or pie dish, crack the eggs and whisk until no streaks of white remain. Add the milk, sugar, vanilla, cinnamon, and salt. Whisk vigorously until the mixture is emulsified and uniform.
  2. Place a slice of bread into the custard mixture. Let it soak for 15 seconds per side. Use a 'press and release' motion to ensure the center absorbs the liquid without the bread falling apart.
  3. Heat a non-stick skillet over medium-low heat and melt the butter until it foams. Place the soaked bread in the pan.
  4. Cook for 3-4 minutes per side. Maintain medium-low heat to allow the Maillard reaction to create a golden-brown crust while the custard center sets completely.
