Ingredients:
- 1 large egg
- 1 cup neutral oil (avocado or light olive oil)
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 0.5 tsp fine sea salt
- 1 pinch white pepper
Instructions:
- Place the 1 large egg into the bottom of a tall, narrow jar.
- Pour the 1 cup neutral oil directly over the egg.
- Add the 1 tbsp Dijon mustard and 1 tbsp fresh lemon juice.
- Drop in the 0.5 tsp fine sea salt and 1 pinch white pepper.
- Lower the immersion blender to the very bottom of the jar, ensuring the blade guard pins the egg yolk to the bottom.
- Turn the blender on high speed while keeping it firmly against the bottom for 20 seconds. Do not move the blender until a thick white emulsion forms at the base.
