Ingredients:

  • 1 large egg
  • 1 cup neutral oil (avocado or light olive oil)
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 0.5 tsp fine sea salt
  • 1 pinch white pepper

Instructions:

  1. Place the 1 large egg into the bottom of a tall, narrow jar.
  2. Pour the 1 cup neutral oil directly over the egg.
  3. Add the 1 tbsp Dijon mustard and 1 tbsp fresh lemon juice.
  4. Drop in the 0.5 tsp fine sea salt and 1 pinch white pepper.
  5. Lower the immersion blender to the very bottom of the jar, ensuring the blade guard pins the egg yolk to the bottom.
  6. Turn the blender on high speed while keeping it firmly against the bottom for 20 seconds. Do not move the blender until a thick white emulsion forms at the base.
