Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • 2 tbsp (25g) granulated sugar
  • ½ tsp (3g) salt
  • 2 large eggs (100g)
  • 1 ¾ cups (415ml) whole milk
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Turn on your waffle maker to the medium-high setting to preheat.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt until no clumps remain.
  3. In a medium bowl, whisk the eggs vigorously until frothy.
  4. Stir the milk, melted butter, and vanilla extract into the beaten eggs until well combined.
  5. Pour the wet ingredients into the dry ingredients. Use a spatula or whisk to stir until just combined; stop immediately when flour streaks disappear, leaving a few small lumps for fluffiness.
  6. Lightly brush the waffle iron plates with melted butter or non-stick spray.
  7. Pour about ½ cup (120ml) of batter into the center of the iron.
  8. Close the lid and cook until steam stops billowing from the sides of the iron.
  9. Open the lid to ensure the waffle is deep mahogany gold, then carefully remove with a fork.
